The Recipe for Le Gruyère AOP Apple Pie
Transform your holiday dessert table with this apple pie that is sure to be a conversation starter.
Ingredients - Pie Crust (Serves 8) - 3 dl all-purpose flour - 1 tbsp granulated sugar - 1/2 tsp salt - 1 1/2 dl grated Le Gruyère AOP - 80 g cold butter - 3 tbsp cold water
- Filling
- 1.8 kg apples
- 2 dl granulated sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cardamom
- 1/4 tsp ground cloves
- 2 tbsp potato starch
- 1 lightly beaten egg for glazing
- 20 g butter for greasing the pie dish
- 1 tbsp granulated sugar for garnish
Instructions:
- Make the Pie Crust: In a bowl, mix the dry ingredients. Add the butter in pieces and rub together with your fingers until you achieve a crumbly texture. Gradually add the cold water and mix until the dough forms a ball. Avoid over-kneading.
- Chill the Dough: Shape the dough into two disks, wrap them in plastic, and refrigerate for at least one hour.
- Prepare the Filling: Peel, core, and slice the apples. In a separate bowl, mix the apples with granulated sugar, spices, and potato starch.
- Preheat the Oven: Set your oven to 190 degrees Celsius (375 degrees Fahrenheit). Grease a 25 cm pie dish with butter.
- Assemble the Pie: Roll out the chilled disks on a floured surface to the size of the pie dish. Press one disk into the dish, fill with the apple mixture, and top with the second disk. Pinch the edges to seal.
