According to Pipsa, allowing the apple pie to sit overnight not only improves the flavors but also makes slicing it easier when it's not piping hot. 'The apple pie is a perfect combination of sweet, juicy apples and the unique nutty flavor of Le Gruyère AOP,' she says.
The secret ingredient—cheese—often surprises guests, leaving them guessing about the source of the pie's extraordinary taste. 'I like to keep the secret behind the great taste to myself and let my guests guess. No one has managed to guess correctly so far, but this recipe might change that,' laughs Pipsa.
Le Gruyère AOP Apple Pie Recipe

Ingredients
Pie Crust (serves 6-8)
- 3 dl all-purpose flour
- 1 tbsp granulated sugar
- 1/2 tsp salt
- 1 1/2 dl grated Le Gruyère AOP
- 80 g cold butter, cubed
- 3 tbsp cold water
Filling
- 1.8 kg apples
- 2 dl granulated sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cardamom
- 1/4 tsp ground cloves
- 2 tbsp potato starch
- 1 lightly beaten egg (for brushing)
- 20 g butter (for pie dish)
- 1 tbsp granulated sugar (for garnish)
Instructions
1. For the pie crust: In a mixing bowl, combine the dry ingredients. Incorporate the cold butter until crumbly, then gradually add cold water until a smooth dough forms. Avoid over-kneading.
2. Form the dough into two discs, wrap in plastic, and refrigerate for at least one hour.
3. For the filling: Peel, core, and slice the apples, and mix them with sugar, spices, and potato starch in a bowl.
4. Preheat your oven to 190°C. Grease a 25 cm pie dish.
5. Roll out the discs on a floured surface to fit the pie dish. Press one disc into the dish, add the apple filling, and cover with the other disc, pinching the edges to seal.
6. Cut small slits in the top crust to allow steam to escape. Brush with egg and sprinkle sugar over the crust.
7. Bake the pie for about 45 minutes or until golden brown.
8. Allow cooling before serving, and consider pairing with a scoop of vanilla ice cream.
